Growing up in Montreal, tourtières were a holiday staple. The original recipe was given to my mum from "ma tante" Lise (a family friend.)
Being an adventurous and accomplished cook, I've elevated the filling from the typical ground meat of grocery store tourtières to a luscious and tender blend of pork and beef chunks. I've kept the spices the same, as this is what makes a tourtière authentic.
Frozen pies that you bake yourself at home
Each hand-made pie serves 6-8 people
Fully cooked filling of tender Pork and Beef chunks, Potatoes, Onions, and spices
Pastry of flour, lard, butter, and salt
Cook from frozen
The meat filling is fully cooked, the pastry is not.
Pre-heat oven to 400F.
Remove the foil covering, but keep the pie in the foil pie plate.
Beat one egg and lightly brush the top and edges of the pie with it (you probably won't need all of it)
Place frozen pie on a baking sheet in the middle of the oven, uncovered.
Bake for 20 minutes, then reduce the heat to 375F and bake for an additional 30-40 minutes (until you see the filling start to bubble through the vents in the top crust and the crust is a deep golden brown).
If the crust (top or edges) seems to be browning too quickly, cover it lightly with foil (shiny side out) but leave a hole in the centre of the foil for steam to escape..
